Chinese breakfast food after a long haul is the hotel first. One cooked snack is optional. Guangzhou yum cha needs a city morning — it does not fit a gorge day.
Jet lag and an unsettled stomach are not the conditions for hunting street food. Neither is a payment code you have not tested yet. Hotel breakfast handles all three: it is there when you wake up, you know what you are eating, and the bill goes on the room.

Most of the published private Beijing and Shanghai lines list hotel breakfast as the Day 1 morning. That is not a budget decision — it is a logistics one. The first time in China already has enough decisions without adding an unfamiliar food search to the morning.
If the hotel breakfast feels too contained, one cooked snack near the entrance is a reasonable variation. A congee stall, a flatbread stand, or a steamed bun outlet within a short walk works. This is not a breakfast tour — it is one stop, eaten standing or at a plastic table, paid in cash if the mobile wallet is not set up yet.

The Guangzhou 3-day line (Baomo Garden, Canton Tower, Gulong Gorge) has three activities that already fill two days. Yum cha — the ritual of dim sum and tea at a city restaurant — needs a slow morning and a table that does not move.

On the published itinerary, a yum cha stop does not compress into a gorge day without cutting one of the three sights. The choice is yours: keep the gorge and add a yum cha morning to a later Guangzhou extension, or keep the yum cha and accept a shorter gorge visit.
