Most overseas “Chinese restaurants” cook from a Cantonese migrant kitchen: sweet sauces, deep-fried pieces, a set menu that barely changes by season. In Guangzhou, Cantonese food is steam, blanch, roast meats, and a light broth. Salt and the day’s fish matter more than a sugar glaze. Snake and offal exist. They are not the default order.

A predictable table in Guangzhou is steamed fish, white-cut chicken, and char siu — not “chef’s combination platter.”

Clear cooking still uses salt and soy. “Mild” does not mean unsalted. Seasonal seafood is whatever the kitchen bought that morning; a house signature is not a guarantee.
If you want less oil and no offal, say those words before the first plate, not after. A shared turntable and serving chopsticks are table manners, not a second article here.
Yum cha is tea plus small plates for a full morning, in a Guangzhou restaurant that runs carts or a kitchen list. It is not a pre-dinner nibble, and it is not a snack you grab at a scenic park. On the Guangzhou 3D2N module, day 2 leaves the city for Gulong Gorge: waterfalls, a glass bridge, optional rafting, a late return. The park may or may not have a cafeteria. Neither is a Cantonese teahouse, so eat hotel breakfast before pickup and keep yum cha for a morning you are still in Guangzhou.

The three-day city block is day 3: Chen Family Ancestral Hall in the morning, then Shamian and Yongqing Lane. Yongqing can hold a dim-sum lunch. That is still a meal after a hall visit, not a morning spent only at the table. A real yum cha morning needs the city forenoon free — a fourth night, or a custom swap that drops the hall to the afternoon.

Day 1 on the three-day line is Baomo Garden, then Canton Tower, then a recommended dinner in the city. That dinner is siu mei or steamed seafood. It is not a second yum cha. Stacking a full tea morning, a heavy roast dinner, and a river night on the same calendar day leaves no room to sit.

Canton Fair weeks change hotel rates and car time around Pazhou and Zhujiang New Town. They do not change the cuisine. Fair dates belong on the official Canton Fair site, not on this page.
